Executive Chef Joachim Koerper and Resident Chef António Simões, along with Executive Pastry Chef Cintia Koerper and Resident Pastry Chef Letícia Silva, lead the kitchen team at Malhadinha. They, along with our Sommelier Andrii Pokryshko and the dedicated restaurant team, warmly welcome guests.

Spanning 610 hectares, Malhadinha Nova achieves organic and self-sufficient production, cultivating a variety of crops including wines, olive oil, honey, and cereals like durum wheat and barley. The estate also raises Alentejo cow, white and black Merina sheep, and black pig, all with PDO protected designations. Fresh vegetables and fruits from restored gardens and orchards further enrich the dining experience, complementing the region’s gastronomic heritage with sustainable practices and exceptional quality. The M Wellness Spa unearths different atmospheres through a journey where interior and exterior merge, celebrating the surrounding wine landscape. The colour green, in all its forms and contents, was inspired by the natural flora of the property. The 110-m2 spa includes a sensory shower, three treatment rooms and a sauna.


Everything revolves around gravity. And the very smallest details at the heart of creating the finest wines.

At Herdade da Malhadinha Nova, nothing happens by chance. Built from the ground up in 2003, the winery, purposefully embedded into a hill, takes advantage of the natural slope for the vinification process.

The grapes, cut from the vines, travel by hand in 12 kg baskets to where they are, gratefully, received to begin the winemaking process. Under a watchful eye, they reach the selection table after sorting in the vineyard. They destem the grapes and transfer them to the vats without using pumps. They ensure the final quality of the wines.

Following the laws of physics, the grapes fall into modern refrigerated presses where human feet crush them traditionally. This manual work integrates with the assistance of the latest vinification processes.

After employing high technology, the wine rests several meters below ground in a thermally insulated environment.

They age the wine in French oak barrels supplied by eight high-quality suppliers: Francois Frère, Mercury, Nadaliè, Cadus, Damy, Tarausaund, Boutes, and Seguin Moreau.
